菜籽油就是我们俗称的菜油，又叫油菜籽油、香菜油，是用油菜籽榨出来的一种食用油。菜籽油色泽金黄或棕黄，有一定的刺激气味，民间引叫作“青气味”。这种气味是其中含有一定量的芥子甙所致，但特优品种的油菜籽则不含这种物质。
